This new version, published November 15, 2009, does not introduce significant changes to the previous text, or additional constraints in terms of activities to be developed by the certified check or days to be integrated by the certification bodies.
The amendments are intended primarily to clarify existing requirements and to promote the adaptability of the standard in all areas of business.

The production of sea salt is an activity that naturally combines economy and environment: this is demonstrated by the use of renewable energy of the sun and the wind and the contribution of this activity to the preservation of open spaces coasts, home of exceptional flora and fauna.
The "saliniers" are called "farmers of the coast" (the salt culture is a branch of agriculture), know how to manage the water and take care of the environment because they know that this depends on the quality of the salt produced.
In Porto Viro the importance given to the environment is demonstrated by attention to the de-dusting, thanks to special filters aspirators, of all aeriform effluents and from the passage into a settling tank, where it takes place the determination of suspended solids and turbidity, for those liquids.
The HACCP plan identifies the critical points for the type of contaminant (glass, iron, mesh sieves, etc.) and has been developed a grid for each problem shows the possible causes and the means of intervention.
The plant has natural lighting thanks to openings with shatterproof panels to minimize the risk of contamination with glass.
Along the whole production chain are then installed numerous deferrizators, to limit the danger of contamination with metals, but also to assess the progress of corrosion of the plants due to the high aggressiveness of brine - the recovered metal is weighed, recorded and sent weekly to the central laboratory in France where it is processed the preventive maintenance plan.
