Salt has a very important role in the bread: it enhances the flavor, it acts on the consistency, the color, as well as on its conservation. For the production of bread is used mainly fine salt.

For the production of bread and bakery/fried products is used primarily dried and fine sea salt or hyper-pure recrystallized salt while for the slurry and the processing of crackers / breadsticks is preferable to an average particle size (1-2 mm).

FINE SALT
- Dried fine sea salt La Baleine with anti-caking
- Dried fine sea salt Margherita without anti-caking
- Hyper-pure recrystallized fine salt Salinor (mainly used for white bread, pancarré, and for salting of chips).

MEDIUM SALT
- Medium sea salt Margherita without anti-caking

Always salt has played an essential role in the production of cured meats and sausages. The diversity of products and manufacturing processes require different types of salt. In general is distinguished a dry salting and a brining one. It can be used for both alimentary sea salt.

Originally, salt was used to enhance the flavor and ensure the conservation of these products. Subsequently its importance was crucial for growth and proliferation of specific micro-organisms capable of transforming the curd in a noble food such as cheese. Depending on the different types of cheese, the manufacturing processes can be numerous such as the types of salt.

To meet the different modes of production, CIS offers a wide range of salts according to:
- Particle size (size of salt crystals)
- Source (refined salt, sea salt)

FOR BRINING SUCH AS FOR DRY SALTING we offer our Margherita sea salt fine, medium and coarse, or hyper-pure Vacuum salt Salinor, depending on the mode of use.

FOR THE PRODUCTION OF SALTED BUTTER we propose refined and recrystallized salt Criblor 40 M: the small size of the crystals avoids to give rise to a too large migration of water contained in the mass of butter, allowing a good homogeneity of salting.

Bulk products in silos can be treated with food anti-caking (E535).
There’s also a line of specific products with mineral supplements for livestock use in blocks.
