Process

The sea,
the wind and the sun.

These ingredients, through a long natural process of sea water evaporation, create the precious sea salt gems in the evaporation ponds.

1. EVAPORATION
Water is collected in open-air basins.
2. CONCENTRATION
The water passes from one basin to another (the so-called "concentrating" ponds) gradually increasing its salt concentration.
3. CRYSTALLIZATION
It is the last step of the evaporation process: the water saturated with sodium chloride makes it precipitate on the basin bed creating pure crystals.
4. HARVESTING
This step can occur in a natural way, according to the ancient salt tradition, or in a mechanical way, with the help of specific machines.
5. STORAGE
After the harvesting, the salt is stored in large piles, in specific storage open-air areas, where the remaining humidity is eliminated.
6. TRANSFER
The salt is transferred inside the production plant to continue its process.
7. WASHING AND DRYING
The salt is washed with saturated water to eliminate potential impurities, without changing its organoleptic characteristics. The salt goes through a centrifugation process and is dried through a fluidized bed equipment, to reduce its humidity to 0,05%.
8. SIFTING
The crystals are selected and divided according to their grain size (extra fine, fine, medium and coarse), passing through metal mesh nets whose diameter changes according to the size of the grains needed.
9. IODIZATION
If necessary, potassium iodate is added to the salt, through a nebulization process that sprinkles the crystals with the liquid element, as agreed with the Ministry of Health.
10. PACKAGING
Then the salt is packed in different sizes and packaging according to the type of retail channel and intended use.
11. TRANSPORT
A logistics network for road transport, organized at national level, finally, brings our products to the big supermarket chains, discount stores, cash & carry, and Italian industries.

Soil and
Rock salt

Over the course of geological events lasting millions of years, salt mines were formed underground by water sediments of ancient oceans. It is the rock salt that can be used for different purposes.
How is salt rock extracted?

1. EXTRACTION
The salt is extracted from the veins, as any other mineral, with machines that perform milling or blasting.
2. PILES
After being extracted and transported to the surface with roller conveyors, the salt is stored in large piles, in specific storage open-air areas.
3. TRANSFER
The salt is transferred inside the production plant to continue its process.

The purity

1. HARVESTING
It consists in injecting freshwater into salt veins to create the brine.
2. SATURATION
The rock salt is led to saturation.
3. PURIFICATION
The saturated brine is transferred inside the plant where it is pre-heated and then purified.
4. RECRYSTALLIZATION
The water is passed through a series of vessels where it boils, causing the precipitation of sodium chloride.
5. TRANSFER
The salt is transferred inside the production plant to continue its process.
